Ayurvedic Recipe for Balancing Vata: Carrot Soup

 

 

 

We’re smack in the middle of the season when vata dosha easily goes out of balance.  With unbalanced vata, you may experience dry skin, constipation, insomnia, anxiety, nervous system disorders, and more. Enjoy this simple, delicious carrot soup and help keep your vata in balance!

 

Ingredients

 

2 tablespoons butter or ghee

1/2 cup onion, chopped

1 rib celery, chopped

2 cups carrots, sliced

2 cups vegetable broth

1 cup milk

1/4 tsp nutmeg

salt and pepper to taste

 

In a large pot, melt butter or ghee and sauté the onion and celery. Add carrots and cook for 5 minutes. Add vegetable broth, cover and cook for 20 minutes or until tender. Remove from heat.  Puree the mixture in a blender (or use a hand blender). Add milk, nutmeg, salt and pepper and return to stove and simmer 15 minutes.

 

This is a simple soup with lots of options for varying it. For example, add a little grated fresh ginger, sunflower seeds, or grated zucchini.
